2009: Challenging? Strengthening!

"Success is not final, failure is not fatal: it is the courage to continue that counts."
~Winston Churchill

Great Clients & Strategic Partners

While we begin the wind down of 2009, many of us are undoubtedly reflecting on the difficulties that affected almost everyone in almost every business across the globe.

I am personally (and professionally) grateful for a very good year, in spite of the challenges presented and the necessity to work harder maintaining current relationships; and to be more diligent in creating new relationships.

I was very fortunate this year to forge several new associations, expand our client base, network with other professionals and broaden our scope of which I anticipate long-term mutual benefits.

Mostly, I am grateful that past relationships continue to be the backbone of Chef Innovations and can't express my appreciation enough for the kind words, referrals and continued support!

I would like to thank you again and look forward to many future success for all!

All the best...

Anderson Seafood: Strategic Partnership

This month we are proud to be featuring one of our key alliances, Anderson Seafoods.  Each month we have the opportunity to spend time in the Development Kitchen at Anderson Seafoods working with some great "Fresh Seafood".

You can see the results of our efforts by visiting the Anderson Seafoods website: www.andersonseafoods.com and by viewing the photo gallery on our website.

An interview with Carl Oliphant, the Vice President of Procurement, Sales and Operations.

Tell us about Anderson Seafoods.

How do you ensure and maintain quality and freshness of your products?

The "hands-on" quality control standards of the processing team far exceed industry specifications. Tell us about your “custom fresh fish portioning”.

Anderson Seafoods is the pioneer in custom fresh fish portioning, and has been providing this service for more than 20 years. We provide our premium, "hand-selected" seafood to fine restaurants, retail markets, and hotels. Our portioning equipment is flexible enough to meet any portion size requirements, and custom-cut portions.

We also create custom products which are packaged for retail distribution.

Client Currents

Rockin Baja
Coastal Cantina

We just opened the newest Rockin' Baja Coastal Cantina in Huntington Beach. It is located in the Bella Terra Shopping Center.

Also, we are introducing 'Catering' to the menu options for those desiring some Coastal Baja Cuisine for Office Parties, BIG Games or other events!

At the Old Town location in San Diego, we recently opened the new "Baja Seafood Shack". A menu of Seafood Cocktails, Tostadas and Oyster Shooters are available at the bar and throughout the restaurant!

Silver City Restaurant & Brewery

We are working with this high volume restaurant and brewery on the Kitsap Peninsula in Washington State. Located about 90 minutes drive from Seattle or a 60 minutes ferry ride across Puget Sound.

We are in the process of developing a new menu to be introduced in Spring 2010.

Additionally, there will be a remodel and expansion of the restaurant, as the Team prepares to move the Brewery to a new location, in order to expand brewing capacity!

A new kitchen design will be another part of the process and will likely go into construction in Autumn 2010.

Very exciting project indeed!!!

BBQ Chicken USA

Recently we introduced a new menu to several locations on the East Coast. Expansion has really begun to kick off, as they opened a 'Chicken & Beer' concept in Virginia and a BBQ Chicken in Brooklyn in November.

We are slowly rolling the new menu items into the existing operations and should have them all up to speed within 2-3 months.

Bubba Gump
Shrimp Company

In November, we began working on some product development for Bubba Gump Shrimp Company.

We will be assisting with the implementation of a 'Fresh Fish' program, along with development of auxiliary items for the menu.

I am very excited about the commitment to excellence this group of seasoned restaurant veterans brings and the professionalism in which they approach the process.
